Enego is an artisanal cheese that comes from the Veneto region in northern Italy. Pale straw yellow, it has the deep rich butteriness common to a 100% cow's milk cheese. But Enego has a mild tangy finish to its creamy flavor, not unlike a Swiss cheese, and the interior is irregularly packed with tiny holes as well. This cheese melts in a superior fashion, like a Fontina Val d'Aosta might, but with less aroma. Enego is mild enough for children to enjoy, yet complex enough to keep the adults interested (and guessing at the name and provenance!) This cheese deserves nothing less than room temperature in order to be savored properly, and calls for a white or wheat cracker or bread so as not to mask the exquisite flavor. Fruits such as pears or white grapes would be a pleasant complement.
