08/09 Harvest - Piccolo Molino 'Dolce Verde' is a Tuscan extra virgin olive oil with a decidedly mild, sweet, fruity finish. Dolce Verde isn't produced until the Moraiolo and Frantoio varieties of olives are turning black and beginning to ripen--the latter part of the harvest in December and January. This first-, cold-pressed olive oil has a very mild, buttery, almond-like flavor with a faintly aromatic grassy scent, making it an excellent choice for recipes that require restraint in order to show nuance: fish dishes, daintier salads, with eggs, or in the production of a homemade mayonnaise, for example. The Piccolo Molino mill is a small olive-pressing mill near Florence that has been owned and operated by the same family for over 400 years.
