Aged cow's milk cheese from Italy is made by  the Auricchio family, a venerable northern Italian producer. Our Provolone is aged until the flavor is deep and rich, for four months in our cool storage area. Auricchio Provolone is a cheese that is best used for eating on its own, with fruit,  or as part of an antipasto platter. Provolone is not usually grated or melted in dishes. A perishable product, Auricchio Provolone may require 2nd day shipping, depending on distance.
