Made from the milk of beautiful red cows, a breed revived in Emilia Romagna after almost dying out after World War II, this cheese, which has a higher butterfat content, is aged for almost 30 months, yet still has the crumbly texture and slightly creaminess of Parmigiano. Although it’s perfetto in any recipe calling for Parmigiano, Red Cow shines when drizzled lightly with our Rubio Aged Balsamico.
